Recipe: Dark Chocolate and Goji Berry Cookies

These delicious dark chocolate and goji cookies really hit the spot for a slight sweet fix but without the crazy blood sugar spike or a normal cookie. As I was making these with the kids I didn't include any whole nuts but I think hazelnuts or pecans would be a great addition.


Ingredients:

  • 3 cups whole oats

  • 1/2 cup ground almonds

  • 1 cup spelt flour (I used @dovesfarm)

  • 1/2 cup almond butter

  • 100ml milk of choice

  • 1 egg

  • 1/2 cup maple syrup

  • 1/2 tsp baking powder

  • 1tsp vanilla essence

  • 100g 85% dark chocolate chopped in to small chunks

  • 1 cup of goji berries

  • Big pinch of sea salt


Method:


  1. Heat the oven to 180° and line a baking tray with greaseproof paper.

  2. Add the oats, spelt flour, ground almonds, almond butter, maple syrup, egg, vanilla essence, baking powder and milk to a bowl and combine.

  3. Add the chocolate chunks and goji berries and stir into the cookie mix.

  4. Using your hands, roll the mixture into small balls (around the size of a golf ball) and then squash into a cookie shape. Place on the lined baking tray.

  5. Bake in the oven for 15-20 mins until slightly browned on top but not burnt.

  6. Remove from the oven, allow to cool, and enjoy!
